Where can I find the API/SDK (?) for building new iFilters? What iFilter version does FileSeek use? Any FileSeek-specific issues to consider regarding iFilter development?

IFilters are a standard Windows thing, so your best bet is to start with the Platform SDK:
http://msdn.microsoft.com/en-us/library/windows/desktop/dd940336(v=vs.85).aspx

FileSeek will support any IFilters that run on your machine. :)
